"What?!?", you might be thinking. "Doesn't Dr. Peter Osborne, the Gluten Free Warrior,recommend a gluten-free diet?"
Well, the answer is yes, absolutely.
But what I mean is that all of those so-called 'gluten-free' products you see in stores, bakeries, and even in pizza shops are a complete joke. They are ALL lies.
You see, it doesn't matter whether you've been 'gluten free' for a while, or just discovered you're gluten sensitive, it's likely you're not getting better because, as Dr. O says, you're
still eating at least one of these common 'gluten free' foods:
1. Corn
From corn tortillas to corn chips to corn flakes, despite what you've heard, corn is NOT a safe gluten free alternative. On the contrary, corn contains a gluten protein called zein, and while it hasn't been studied nearly as aggressively as the wheat gluten, gliadin, researchers are finding that people with gluten sensitivity do react to it.
2. Rice
This one probably comes as a bit of surprise, but yes, even rice has gluten in it. In reality though, the academic argument has never been over whether or not rice contains gluten,
but rather whether or not the type of gluten in rice creates damage. And like its gluten protein cousins, zein and gliadin, research suggests that rice gluten can cause inflammation in the gut of children.
3. & 4. Millet and Buckwheat
Living things generally don't like to be eaten by other living things. That's why skunks spray, dogs bite, and porcupines have sharply pointed quills. But what about plants with seeds, like millet and buckwheat... how do they protect themselves from being eaten? Simple, they contain anti-nutrient properties, such as gluten, lectins, and phytates, all of which wreak havoc on your body. I'll dive into these anti-nutrients another day, but suffice to say, researchers now believe that "The allergens in rice, corn, millet and buckwheat should be better studied before they can be recommended as alternatives for cereal allergic children."
5. Quinoa
Now this one just might be the most surprising on the list. Ever since being touted as a safe alternative to wheat, rye, barley, and oats, quinoa consumption has been on the rise. So why does Dr. O say you should avoid it?
The problem with quinoa is that it's often processed in a facility where other gluten-basedgrains are processed, and this cross-contamination, even microscopic amounts, can lead to unpleasant, even dangerous, reactions for some.
Plus, new research shows that some quinoa varieties are capable of stimulating an immune response as toxic as wheat gluten, and you begin to understand why quinoa should not be a part of a diet to lose weight.
